Diamond Rock est un rhum blanc pur jus de canne de la jeune distillerie A 1710 située à l’Habitation du Simon. Destiné aux ti punch et aux cocktails, il s’apprécie aussi comme un rhum de dégustation.

La canne récoltée à la main est pressée une fois. La distillation s’effectue dans un alambic en cuivre et sa colonne à 7 plateaux, avant une lente réduction à 50,5°.
